Slimming world

Recently I am In love with couscous
I've been trying the packet ones but they get very expensive so I have been making my own from scratch it's easy once you figure out a recipe that suits your needs
Our cupboards are always full of tins and packets I don't do jars thought, too much sugar and salt in jars.
I make all my meals from scratch you don't have to spends loads to get a full cupboard and fridge

To make couscous you will need


  • Large frying pan 
  • Wooden spoon
  • Small mixing bowl
  • Large mixing bowl


Food list

  • 4 mushrooms 
  • 1 onion
  • 1 large pepper or 2 small peppers
  • 1 courgette
  • 3 tomatoes
  • Garlic of your choice
  • Mixed herbs but you can use any you like
  • Turmeric
  • Beef stock
  • Hot chilli powder
  • Couscous I use about 250g but you can use what ever you want

Firstly chop up your mushrooms, onions, peppers, courgette  and tomatoes
Fry them in your frying pan with beef stock I use 1 stock cube with half a cup of water you don't need loads of water add the herbs and spices I cook them for about 30 mins on a low heat.
When they are cooked take the frying pan off the heat
Put your couscous in a small mixing bowl with hot water so it covers it put a plate on top to cover the bowl.
Get out your large mixing bowl put couscous in with your cooked mixture and give it a good stir so it covers all the couscous otherwise you end up with plain couscous

Serve out it is lovely cold or warm
You can reheat this just makesure you have heated it properly
